01   One Base, Split Two Ways

Seedless, medium-hot raspberry pepper jelly, cooked as one base and then split: half stays plain, half becomes a raspberry, lime, and mint variant. Long red chilies carry most of the heat with a little Carolina reaper behind them.

Seedless is the whole point. A quick immersion blend, then the hot mixture goes through a fine mesh strainer, pressing hard on the pulp to leave the seeds behind and keep the yield. What comes through is a smooth, seedless raspberry-pepper puree.

Cooked once, then split. Plain in one pot, lime and mint steeped into the other.

Three tablespoons of pectin set it well for a pound and a half of fruit. That is the ratio to scale from, and it is why the peach batch, with more than twice the fruit, needed more.

03   The Method

  1. Prep the jars and canner. Wash the jars, lids, and rings and keep the jars hot. Simmer the lids and rings. Bring the canner water toward a boil, deep enough to cover the jars by an inch.

  2. Cook the base. In a wide pot combine the raspberries, minced long chilies and reaper, apple cider vinegar, bottled lemon juice, and salt. Bring to a gentle boil, then simmer eight to ten minutes until the raspberries break down and the peppers are tender. Give it a brief immersion blend to smooth.

  3. Strain the seeds. Set a fine mesh strainer over a clean pot. Working in batches, ladle the hot mixture through, pressing the pulp hard and leaving the seeds behind. You now have a smooth, seedless raspberry-pepper puree.

  4. Add the pectin. Mix the three tablespoons of pectin with a quarter cup of the sugar, sprinkle it over the hot puree while whisking constantly, and bring back to a boil.

  5. Add the sugar and set. Add the remaining sugar all at once and stir until dissolved. Bring to a hard rolling boil that cannot be stirred down, boil hard one full minute stirring constantly, then off the heat and skim the foam. This is the full base.

  6. Split the batch. Ladle roughly half the hot jelly into a second pre-heated pot, aiming for an even split. One pot is plain, one becomes lime-mint.

  7. Jar the plain half. Ladle into hot jars at a quarter-inch headspace. De-bubble, wipe the rims with a vinegar-damp towel, and apply lids and rings fingertip tight. Set aside while you flavor the other pot.

  8. Flavor and jar the lime-mint. Add the half cup of bottled lime juice and a handful of mint to the second pot. Steep in the hot jelly five to ten minutes, tasting a cooled spoonful until the mint reads right, then remove all the mint and return to a gentle simmer for thirty to sixty seconds. Jar as above.

  9. Process. Load all the jars, covered by an inch of water. Strong boil, process fifteen minutes. Turn off the heat, rest the jars five minutes, then lift to a towel and cool twelve to twenty-four hours undisturbed. Check the seals and label each half. Do not judge the set for a day or two.

Before shelf storage

High-sugar, high-acid jelly (fruit, apple cider vinegar, bottled lemon, pectin), water-bath processed. Expected within safe canning acidity at these ratios, but it was not pH-tested. Store sealed jars cool and dark, and refrigerate after opening, using within six to eight weeks.
